Depends how far, how long, how much you want to spend and when, but here are my favourites:
Australia - especially Western Australia - a long way to go, but you'll probably find yourself wanting to stay forever.
Florence & Pisa - Both gorgeous and facinating, great food and friendly people. Book a cottage, hire a car and explore.
Paris - if you can see past the arrogance of some Parisian waiters (!)- the most romantic and beautiful city in the world.

If it's only for a few days France or Italy would be excellent choices. If you feel language may be a problem Holland would be a good alternative. English is spoken just about everywhere.

Ireland is magnificant and the most beautiful place and friendliest people imaginable!
The rates are cheap-especially on the off season when it's coolr and less touristy
The Bed and breakfasts are cheap but amazing food and company and the homes are amazing-especially the farm homes

you can go wherever you want and do whatever you want. try some of the travel websites they have videos on there and descriptions of what there is to do around the resort.
I hope you choose somewhere nice. it's much easier if you have somewhere in mind though.
