I have tons of cotton fabric, Many colors and designs, but not a lot of each design, and I don't want to make something that looks tacky. Any easy ideas?

i would go with the 9 block pattern.
it is always fun to look for matching material elsewhere on the quilt once you have it assembled.
3 or 4 inch squares are a great size to cut your pieces out at, if your material will allow.

You could make a sampler quilt. Choose matching colors for each block and different designs ( I did one with six different block designs). Then assemble the blocks in a pattern.

My mom made a pinwheel quilt with tons of different fabric colors and it came out beautiful.

Have you ever seen the Envelope Quilt? It looks like SUCH fun!
These ladies appeared on HGTV with this quilt and it's so colorful, the possibilities seem almost endless!

I don't know what pattern but you should make it bright pink with lime green!
