Might the onions act as a natural defense against insects?

I'm also wondering whether there is any harm in removing the pollen from any flowers, e,g, eggplant, so as to reduce the attraction of bees and other pollenating insects.

I want to avoid bees, wasps, & insecticides due to allergy & child concerns.

All of them will grow well together. Yes, onions are a good repellant. I plant them all around my cabbage plants and don't get any bugs.

I have ALL of these in my garden with no problems coming from their association. Onions MAY DETER insects, but only on them. As far as removing pollen, go ahead. You will get no yield. The pollen is what fertilizes the blossoms. If there is no pollen, there is no fruit. Why are you so concerned over bees? The bees in your garden are usually honey bees or minute wasps. The bees are working, and the wasps are looking for insects to eat. Why get rid of your insecticides?

I agree with saaanen. Don't deter bees and wasps. Hell, getting a beesting is part of growing up! Unless your children have a known allergy to them, I'd let them come into your garden! It's called nature. There is a cycle to everything! I remember as a kid making a game out of running from the bees. And yes, I have been stung more than once. Unpleasant? Yes. Am I dead? No
