Pinwheel finger sandwiches are always something I have seen.
-chop some tomatoes, de-seeded jalapenos, onion and some cilantro. Add a squeeze of lemon then salt and pepper to taste. mix really well. you want them to be fairly minced.
-mash some avocado and squeeze in some lime to keep it from turning brown.
then get some flour tortillas, mayo (not necessary), some extremely thin sliced lunch meat (turkey is best), chopped romain lettuce, sprouts (optional) and some shredded mozerella cheese.
lay out your tortilla and put some light mayo down the center, followed by some avocado, the salsa, some chopped lettuce, sprouts, cheese and then your meat. wrap tightly and stick in some toothpicks. This will hold your wrap together. then take a rigged edged knife and slice. they come out really pretty, especially since you can see the color contrasts once the pices are cut. They are healthy and very tasty! you can garnish the platter with cherrie tomatoes and carrots!
