Apple Website might say about 500 songs. But I really doubt it. I would actually say somewhere between 400 - 600. Not every song is the same. Some songs are longer than other songs. Some might be 3 minutes long and others might be 5 minutes longs. After you've taken that into consideration, you also have to take the quality of the file into factor. It could be anywhere from 20 Kbps to 320 Kpbs (Bit Rate). The Lower the quality, the more you can store into you Ipod. The Higher the quality, the less you can store, and the closer it is to CD Quality (So they say, but not really noticable, from 128 to 320 anyways). The Average quality (and the settings I usually put to rip CDs) are about 128 Kpbs, 44100 hz (Sample Rate), with an average lentgh of probably somewhere around 3:30 seconds, which usually equals to about 3.3 to 3.4 Mb. Technically speaking would be around 600 songs on a 2 GB Ipod. Of course, they never actually hold 2 GB like they claim, it might actually be around 1.97 GB, and not every song is 3:30 seconds longs. My Ipod shuffle is a 1 Gig, but when I have it connected to Itunes, it tells me that it's actually 967.1 Mb.
Hopes this helps a bit.

500 songs if every song is 4 minutes long encoded at 128 kbps.
So it is always about 500 songs.
