I'm having pancake day 2morow as I can't on tuesday, so do you know of any nice or strange toppings? (I'm willing to give anything a try)

I like blueberry pancakes and I think coolwhip is a nice alternative to maple syrup...

An interesting topping is sour cream. Most people use whipped cream and some kind of fruit, but sour cream gives an interesting twist to it.

you might add sweet corn to the batter. i'm fond of that.
i also sometimes put peanut butter on the cakes before i add syrup.
both are good, if you like it.
