Most of the people who do this are volunteers--there is no "field," so to speak. One of the largest such volunteer organizations in the U.S. is Perverted-Justice.com (PeeJ). Some law- enforcement organizations do this work too, but usually on a limited basis (that is, they are looking for a specific perp, not just trawling for whomever, as it is too time consuming and expensive to do so). If you wanted to do this in law enforcement, you would most certainly have to first work as a beat cop/rookie, then work in vice. It's unlikely it would be a position you would walk in to.
You should do some more research on PeeJ and those like it, because, as much as you enjoy watching people get busted, many reasonable people have serious misgivings about this kind of entrapment. There are other, specific criticisms of the founder of PeeJ as well, including that he really seems to enjoy pretending to be a little girl (or woman) and having sex chats, then posting those chats online--this is, to many, its own kind of sickness.
The other funny thing about this kind of vigilanteism is how often the investigator/vigilante becomes the perp. Something to keep in mind as you wallow in the mire. There are many other ways to protect children from exploitation, and sexual exploitation is only one of many ways--physical violence, neglect, hunger, lack of medical attention, drugs/alcohol, homelessness, broken families--that children are hurt by adults and society.

You could get a degree in Criminal Justice. Then, if you make the right contacts, you could open your own private business that works with local law enforcement to protect kids. The business could create educational materials and hold seminars designed to help parents learn how to keep their kids safe.
