Really now, If it's going to be YOUR portfolio, it definitely should be YOUR work and YOUR ideas that feature in it, don't you think?
In my company for one we would hate to think that one of our employees got his/her job by misrepresenting other peoples work. In fact, it's a reason for instant termination if ever we find out.

Portfolio usually means sites you've worked on. If you're looking for inspiration, go to a templates site like templatemonster.com. Never, ever put other peoples work in your portfolio.

Theres lots of companies that sell web site templates you might want to look that up on the net and take a look at some of theirs for ideas....
