Choose a theme high schoolers would be interested in...."anger" for example...or more generally, "strong emotion".
Have them sculpt words which represent the theme...and the sculpting medium would have to be appropriate to the word or phrase chosen. One (sort of lame) example might be the word "sorrow" sculpted out of Kleenex....or "jealousy" scrawled in red lipstick on a photo of a supermodel, etc. I'm sure you understand the concept.
Now, whether or not this will result in any decent art is arguable, but it is an artistic exercise which: a) demonstrates to the students that art and emotion are intimately connected, b) one person's art is another person's schlock, as well as c) much of art is a by product of emotion.
Also, the media chosen can have a meaningful connection to the finished work.
I'm thankful to hear of a teacher who is interested enough in her students that she solicits ideas!

Have them do something similar to junkyard wars.
Have them work in pairs and to come up with a sculpture type project that uses nothing but recyclable products. They must make a piece of art from the products that has a title and a story of inspiration. It cannot be something that they have just thrown together.
Have some guidelines that they have to follow. But, do not make it so restrictive that their creativity is shut down.
GOOD LUCK with those kids. Great that you are going outside of the box.

When I was in school, a friend of mine made a negative drawing of an owl by painting the paper black and scratching it off with a pin to reveal each individual feather. It was unbelievably beautiful when he was done.

with spring approaching, and everyone a little stir crazy with being indoors, get sheets of photo paper and go outside and make sunprints. we always used leaves, flowers (nature items) but you can use anything. these are very pretty to hang in frames.
