First of all you can not call all African countries as a one entity because there are more than 50 countries and you need to ask what county food you are looking for. Also you need to ask you tour guide or who ever is with you to go authentic restaurant. Most African counties were colonized by the European and they were designed to cater the European people and some of 1-5 star hotels are not mostly owned by Africans. Too sad. But still it depend on where you go. If you go some African countries you will be surprised by what you see. Not only you will eat African food but you will drink African drink, you will seat on African made chair, you will eat on African made table, you will listen African made music and every thing is African. But you need to know what you are looking for and you need to do your research advance. Also you need to talk Agencies owned by Africans

Our dishes, South African, vary a lot and they do at an extent mix with some Indian and European dishes. This is because of our heritage. Our distinctly South African Zulu and Xhosa meals are for example, samp and beans (Mandela's favourite). I have never seen it served at a hotel, anywhere in the country. But it is really nice to us. I miss it so much when travelling. Then we have mealie meal. These are not 'pretty' on a plate at a 5 star restaurant. But go to Johanesburg and you will find some upmarket restaurants selling them. It is all in the mind, restaurant owners still think 'African is not nice.' And what can we do about it. They own the hotels...

Try eating out next time, plenty afro-cuisine in major African cities, sometimes around the corner of the hotel. Am not saying eat from the first street vendor, but choose a restaurant. Africans are also flexible and you could ask them to make some local dish for you. Don't let them get carried away though, as you might end up eating something you really didn't dream of eating.

They have strong earthy flavors, for example, Somalian and Ethiopian cuisines. For many tourists, these flavors are unusual and are an acquired taste. If hotels serve them, they are what I call "dumbed down" flavors to make the dishes acceptable to tourist and people who want the thrill of eating exotic dishes without having their palates assaulted.
Search outside the hotel for traditional African dishes. Ask a hotel employee where you should go. The flavors are unique, but I find dishes delicious.

Probably because the hotels are for foreigners. A lot of african food is great but people who can afford hotels don't want it.

One can give you many reasons for your questions , some of them could be.
1) Wheather it is Africa or any place , some one sells what He/She thinks it is saleable.If there is no demand for one thing , who wants to sell it?
2) It could be lack of respect for self culture/or looking down to oneself??
3) Many of African Restaurants and Hotels are properties of non Africans, and they sell thier own

i'd guess because african dishes aren't soo classy and neat.....i never saw a restaurant anywhere that serves african dishes...
