Bartlimaeus trilogy by Jonathan Stroud is awesome! The first book is Amulet of Samarkand. The last book will blow you away. Wow.

Diana Wynne Jones Chrestomanci series (you'll see where JKR got some of he ideas); I really like Lives of Christopher Chant She has a sense of humor, too.

Patricia Wrede's Dragon series-- I think the first is Dealing with Dragons
Robin McKinley's Hero and the Crown and The Blue Sword
Philip Pullman's The Golden Compass series (I also liked his Ruby in the Smoke series, but it's not fantasy-- historical mystery, more like)
Lloyd Alexander's Chronicles of Prydain-- the first one is The Book of Three

I say commence with the Harry Potter sequence. SoUE is performed, so which you would be able to study the entire sequence whenever you like, yet with the final Harry Potter popping out quickly, i'd decide to get something of the sequence study so i'd desire to be in on the conversations happening while the final one comes out.

you could try Susan Cooper with her series (I don't remember the order) that included Over Sea Under Stone, the Dark is Rising, Greenwitch, and Silver on the Tree. Read Haroun and the Sea of Stories by Salman Rushdie. What about Tolkien and the Lord of the Rings?

the pellinor series by alison croggon, they are almost as great as Harry Potter, theres three out at the moment. the first is The Gift the second The Riddle and the third The Crow, they are awesome, a must read for any fantasy novel fan!!

Dunno if you would call it "literature" but you should read some manga if you like that sort of genre. A popular choice would be "Full Metal Alchemist", and a less popular choice but nonetheless a great piece of work, "Monster" are my two recommendations.
I'm also sad that the Harry Potter series is coming to a close. But who knows, the next author with as much potential as Rowling may be writing a great book in some cafe somewhere....or in his/her own home. XD
