Hormones do not effect "who" you are attracted to as much as they effect "how much" your feeling attraction.
So "who" you are attracted to, for a majority of people tends to be stable over time (such as being attracted to a certain type of person whether female or male or other). Although this can change, by an event, or just by even meeting the right person.
Many times people repress their attractions toward certain people when they think there is something wrong with it, or that others won't accept it. Repression can sometimes lead to anger or confusion.
If you want to know more about who you are attracted mentally, physically, emotionally, etc... why not try using the klein scale to get a better idea. It can help you assess your attractions that you have right now.

It depends upon the individual.
Generally though, gay people know quite early, even before they truly have the rush of hormones during adolescence. Bisexual people on the other hand, begin to notice things about themselves in adolescence that points toward a possible dual nature to their sexuality.
Bisexual people also generally accept who they are much later than gay people -- they self-identify and self-label themselves as bisexual later -- I've heard one source say in their mid-twenties or so.
One thing pointing towards bisexuality and not gayness is that one has the uneasy feeling that he or she just does not quite fit into the gay culture or lifestyle. (In fact, outwardly, you might very well fit better into the straight lifestyle.) You may have gay friends but that is not the same as totally immersing yourself in the lifestyle of a gay man or woman.

recall the last 10 people you slept with, if they were all men then the chances are your gay at any age.
Sexuality isn't an on/off switch and whilst you may see you libido go down with age, this doesn't mean that you sexuality will be any less sure.
