Why big companies doesn't work on PHP? What is the reason people doesn't prefere PHP for big projects?

That's a false statement - a lot of large sites use PHP, Digg.com is one such site which is very high-traffic and runs on LAMP (Linux Apache MySQL PHP).

PHP and the products above are open source - which is something a lot of businesses have not yet warmed to the idea of.

Big companies don't use PHP because theit IT managers like to run big budgets.

As to big projects, there are plenty of those written in PHP. Flickr is written in PHP. Friendster was originally written in Java, but rewritten in PHP after it ran into severe performance issues. The original Yahoo! Maps was written in Python, but was recently reimplemented in PHP.

a lot of big companies think that php doesn't scale well, is unsecure, etc. but most of them aren't well informed. yahoo, digg, google, so many others use PHP for big projects. but it's not so easy to convince big companies who may have already invested money in other technologies and developers who don't want to learn something new.

PhP is used with Apache. Apache is mainly a Linux program. I know I know, You can run Apache on Windows. In fact, I use Apache, MySQL and PhP on a Windows system. I also run IIS (for ASP) on the same system.

Big projects for use inside a company are usually done in ASP because the companies usually use a Windows server OS, and not a Linux.
