I got pretty big fingers, not real big, but big enough that they get in the way. If one of my fingers is on the way of one string and I move it back/forward just a little, then it's in the way of the string on the other side of my finger, it doesn't seem like I'll be able to ever be any good at guitar just by having large fingers. Is this something I can overcome?

So I could get a guitar with larger spacings between the strings?

Sure! You just need a bigger guitar. I had the opposite problem when I started playing: my hands were too small, not strong enough.
