If you can pick a classmate you know well, you might do a short paragraph on each year of his/her life. Maybe with a title like "The Life and Times of George Smith." You'd have to talk to the mom to find out about things like how much he/she weighed and whether he/she had hair at birth, etc. But it could be lots of fun because all moms like to tell funny stories about when their kids were babies and toddlers. Then go on to highlights of each year of school. Make your classmate out to be a hero at every opportunity.
Or, if you don't know your classmate very well, then try to spend enough time with him/her to find out his/her passion. Is it football, a collection, skateboarding, or computers? Then center your essay about his/her involvement with that passion or hobby. Or maybe he/she has several. Focus on all of the things this person does and give lots of interesting details. Of course, try to make this person sound really fascinating. Everyone has an exciting part of life that no one knows about, and you have the privilege to find it out and share it on paper.
And if you get to read these aloud in class, it might be fun to not tell anyone who you are writing about, and then write the whole paper telling little-known facts about this person: things like what was his/her first word, and how he/she used to drag a "ducky" blanket around until kindergarten, and took ballet or karate lessons when she/he was only four. Everyone would have to guess who the mystery person of your paper was.
Write enthusiastically and joyfully and your grades will soar. Teachers get bored reading the same old boring essays and really appreciate something creative. I know. I'm a teacher.

What grade are you in and does your teacher teach a specific type of writing? I'm a teacher and we teach students to first make some sort of graphic organizer so you know what you are going to write about. The first thing you need is an opening paragraph. We teacher 2-3 sentences that tells who, what where, when and how. "hook" your audience so they want to keep reading. Then you have the body of the paper. Again, we teach that each body paragraph is one main idea supported by 3 details. Ex. main idea for paragraph #1 Johnny likes football. details...1. plays on a team 2. position is quarterback 3. has played for 3 years. Then you just need to take those ideas and make them into complete sentences. Last, you have your concluding paragraph. You wind everything up and leave a nice or warm feeling for the reader. Make sure you use transition words between paragraphs and make your writing exciting. Use adjectives and replace boring words with exciting words. The only thing you need to know about essay writting is this...Tell em what your gonna tell em, tell em, then tell em what you told em. Meaning, opening paragraph should say what the paper is about and at least three points your going to make. Second paragraph discusses the first point in detail. Third paragraph discusses the second point in detail. Fourth paragraph discusses the third point in detail. The Fifth paragraph recaps the paper and should say something like blah, blah, and blah are the reasons for blah. Works everytime and if you are required to write more than a 5 paragraph essay then just add more points to discuss in detail plus your opening and closing paragraph.

well, when i had to write a paper about someone i started off by describing them, using colorful and vivid language (for example dont say "he is tall. he has brown hair. instead say something along the lines of he stands about 6 feet tall with chestnut brown hair that falls to his shoulders.) next go into his/her personality, some trade mark things that make them different from everyone else. maybe talk a little bit about their family. the key is to use colorful language, not only will it make your paper more interesting, it will add length.

Talk about what was, what is, and what will be.
So, talk about the classmate's earlier days, what they are doing now, and what they will be doing in the future, based on their interests, goals, and talents.
Maybe say one funny thing about the person, and add some of your own opinions about the person. All good of course.
