The only real issue with changing from a 2 handle to a single is covering the extra 2 holes that technically don't need to be used when you install a single handle. Most singles come with a plate that covers the holes but not all do. So check the box carefully before you buy.
Other options would be to use the extra holes to install a soap dispenser or a separate sprayer if you are not buying a pull out spout type. Even a hot water dispenser can be added but then you are starting to crowd the 8" spread you have between the outer holes. Another option is to use a soap dispenser in one hole and use a co ck hole cover on the other one. These can be purchased at any home center usually in the general plumbing repair parts area.
While you are shopping you should probably purchase 2 new supply tubes for your new faucet instead of trying to use the old ones. Braided stainless steel ones are the best and the simplest to install. Just make sure you get the right ones to accommodate the valves and faucet connections you will have.
If you don't have a basin wrench you might consider getting one. It will make removing the old one easier and installing the new one.
All this is assuming you are replacing the kitchen faucet. You won't have any of these issues if they are in the bathroom.

Are you saying you want to replace a two handle faucet, with a single handle faucet? The only way you can do this is replace one with the other. There are no faucets made anywhere, that can be converted from 2 to 1 handle. It doesn't matter if it is a kitchen sink, or a bathroom sink.

remove the double handle faucet and install the single handle faucet... all kitchen sinks have four hole... the new faucet will come with a plate to cover the 3 holes in the middle and the sprayer will cover the 4th hole... if no sprayer u can purchase a caulk hole cover to cover the 4th hole... good luck

I assume you are talking about the actual spigot...If so, you merely buy a faucet that fits your sinks specifications and install it per normal protocol. But, to be sure you should go to either lowes.com or housebeautiful.com and look for home improvement links and ask away. I find its better to read instructions somewhere rather than merely ask someone at the hardware store because sometimes (not always) these people pretend to know and ....guess what? They don't!
