As my tastes have turned to the simple and easy ("easy to listen to," not "easy to play"), I find that Van Halen's "Jump" solo comes to mind as one that gets me playing the air-guitar.

John Petrucci's guitar solo's on Dream Theater - "Stream of Consciousness".
The first solo (before the middle section) is very cool and technical.
The second solo (near the end) is beautifully melancholic, especially if you know what the song represents after hearing "Vacant" first.
It's about someone's life flashing by before passing away.
