UAA is a public college, and it's pretty easy to get into. Just keep in mind that you will have to live in Alaska for at least a year to qualify for the resident tuition rate, and the out of state tuition rate is fairly expensive.
If you are looking for a more selective school, the Alaska Pacific University is a private, liberal arts college that focuses on environmentalism and ecology.
If you want the real "small town" Alaska experience, try looking into a satellite college in a smaller town (Homer, Sitka, Soldotna, etc). You might have a limited selection of majors, though.
As far as work, no, you won't have to work in a processing plant. Anchorage, Alaska is like any other mid size city. We've got Starbucks, bookstores, fast food places, and a plethora of entry level food service jobs (that are a lot easier than working in a processing plant!).
