You have to use iTunes.

I don't have iTunes open now as I write this - so it is from memory. Open iTunes and highlight a song. Right click (if using a PC) to get the properties. There should be a tab that says art (or a way to access art). Click on that. Then you can put in any image you want - album art, a picture you took, one from the web, etc. Repeat this process for other songs. You can also do a whole bunch of songs at once (say songs from one album) by highlighting all the songs, clicking properties and the art tab.

Then reconnect your iPod and allow it to resynchronize. The iPod (provided you have one that can show pictures) should show the image. If you have an older iPod (black and white), then you cannot see images.

pressing the middle button a couple of times when a song is playing, it should show the volume, album art , where the song is time wise, and a star rating.
