Santa Clause used to be the colour blue, but he later on was turned red. Coka cola changed santa clauses colour to red for advertising and it he just stayed red.

according to the picture on this website he is dark skined with Caucasian features. which fits with the fact that his name is Greek and he lived in turkey. he is a typical middle eastern/ Mediterranean style man
