Being a subjective answer as it is - there's no indisputable most important person ever - I would say humanity's common ancestor, some south african woman who lived several hundreds of thousands years ago whom they nicknamed mitochondria eve... apparently each and every one of us can be traced back to her - that makes her pretty special, doesn't it?
