our local adult learning center offers a pastry course that last 4 weeks, but I dooubt that would qualifgy you as a chef.
The main chef class at the technical school near here offers a 1500 hour cooking class that lasts a year to be certified as a liscensed chef in the state of Florida

1-2 years depending on what school you choose and if it's accredited. Plus you'll have internships. It's a pretty hard curriculum, believe it or not.

:) good question...Pretty much look for some schools, culinary schools that is, and look at their programs. Some are different so it depends on what you are looking forward to as a career.
