I could see a mutation of a person who could eat unlimited fat without dying. I don't know what good eating 1,000 quarter pounders in one sitting would be good for , though.

I can't really see "powers" developing, but just for fun, say you could somehow get control of your ion chanells and therefore affect the electron flow around your body. You presumably could then gain either magnetic or electrical type powers.
Likewise, controlling the heating process and you could generate enough heat energy to ignite things. I don't see created the reverse though.

They didn't really start mutating...they were born with their powers though a special (X) gene.
Hell I would love to be able to eat 1000 QPs in one sitting and not gain weight though.
