Usually, only the front 3 or 4 defenders rush toward the QB on a play. A blitz is the addition of a LB or defensive back, used to overload the blockers so that someone can come free and get a sack. The downside is that there is one less defender to stop the run or defend a pass in the air.

A blitz is when you bring extra pass rushers to put pressure on the QB. In a 4-3 scheme teams generally have their 4 D-lineman
rushing the QB(unless they are dropping them into coverage, which does happen). Generally a team will blitz from the outside, bringing an Outside linebacker, corner, or safety

A blitz is when the defense puts extra pressure on the quarterback by having the linebackers and in dire cases the cornerback and or safetys go for him. Most of the time it is just the linemen that try to get the sack.

It's basically a rush into the backfield by a defensive unit in an attempt to overwhelm an offensive line and backs' blocking for their QB. This is usually acheived by sending more defenders into the backfield than the O-line has bodies to block with, or disguising who they're going to send on the blitz based on where certain players line up.
