I have a 100 year old house, and my floors are completely uneven. Any processes or suggestions are appreciated. Thanks.

You have to first see why they are uneven. If it is the floor boards underneath the uneven floor then you may have to jack some columns up to the floor. If the uneven floor itself is warping then get it planed and sealed, professionally

The floor and foundation has settled. A more permanent fix would be to jack up the settled pier or foundation and place a more secure footer underneath it. You could add some floor leveling adhesive to the floor for a quick fix. The third option is to tear the sucker down and start all over.

if your foundation is solid and has not moved. then it is more then likely your house was simply not built square. common problem in some rurual house's of that time. it most likely be cheapest to build a subfloor over the existing one and have it level.
