Hello there.
Tenerife is an excellent choice for a short-haul winter holiday, at that time of the year the weather will be lovely.
You don't say what your budget is so I'll try to give you a selection.

First of all, I'd say stick to the south of the island. The north is greener but wetter and if you're going for the weather, it's best in the south which means Los Cristianos or Playa De Las Americas/Costa Adeje.

At a 3 star standard, the Oro ***** is ok- basic but clean & comfortable and well located for everything you need. Probably best to book flight & hotel seperatley- www.medhotels.com have good rates for this one.

There are varying 4 star hotels which probably make up the vast majority of the hotels in this area, but not only do they vary in price, they vary in quality.
The Fanabe Costa Sur & Noelia Sur are usually very reasonable and ok, although not the best 4 stars. The Iberostar group have a few hotels all similarly priced and of a reasonable standard.
The Esmerelda has 4 stars but it's really a 3 although it too is ok.
In Los Cristianos the Paradise Park has good rates but this is because the location isn't great- it's on the hill although the facilties here are very good and the pool complex is lovely.

At the higher end of the 4 star lot the Med Palace has a good reputation and is part of the prestigious Sir Anthony/Cleopatra complex- known as "The Mare Nostrum Resort". It is well situated on the front going out to Adeje. The Med Palace is the least expensive although the poorest in the complex- The Sir Anthony is the best but it may get 5 stars now-best check.

There are more 5 star hotels being built everywhere with the best value being The Costa Adeje Gran- probably the cheapest 5 star on the Island and in my opinion well worth a look for overall value and good quality-it would get my vote every time! GREAT for a nice week away at a very reasonable price!

The Gran Melia Bahia Del Duque is beautiful if a little pricey and The Villa Cortes is also very very nice- both are at the higher end of the price scale but if you can afford it why not?

Finally one of the newest is The Gran Tacande- it's a 5 star deluxe and a member of the leading hotels of the world and it's pools, location, rooms and service have to be some of the very best money can buy. That said, for the price you'll pay for it, you can easily afford to go to Dubai and stay in one of the 5 star resorts cheaper!

If it were me, I don't think The Gran Costa Adeje can be beaten- make sure you don't confuse it with the H10 Costa Adeje- theres no comparison.

Whatever you decide- I'm sure you'll have a lovely time!

All the very best to you!
