Put 'limestone mines' in your search engine. They are starting to be used for a number of reasons. You probably don't want to build in an abandoned limestone mine because they are usually 100 feet deep or more (however one reason they are being used to store 500,000 dollar antique cars is because the temp is constant year around and they are protected from acid rain and such). But there is a lot of information on them that may be able to help you with building in a cave or such. I've seen stories about houses built of old tires on the Discovery Channel but there's much more maintenance than underground. Good luck.

In the Outback in Austrailia a large number of homes have been built underground to shelter from the intense heat. You might try a search for 'earth sheltered house'
