I really don't know how you could pick one. Anything with him in it is great.
There are the obvious choices. Godfather and Scarface are obviously great movies.
But, my favorite with Pacino is Heat. The scene with him and DeNiro in the cafe drinking coffee is one of the best scenes in a movie. They are just talking, but there is much more going on there.
But, the scene in Scarface when he is in the resteraunt telling everyone off is awesome as well.
Too hard to pick for me.

He has had a phenomenal career filled with awesome movies.
Choosing between The Godfather, The Godfather II, and Scarface is next to impossible.
Addition: Thanks to all who reminded me about "Heat." A great movie!!! And "Scent of a Woman" was terrific as well. See, impossible to pick.

The best movie STARRING him or simply the best one he has been in? I make that distinction because the principle star of the Godfather was Brando. If the latter, I think the Godfather, hands down.
