take a tour of the city to see the whole city with otur guide explaining the important landmarks existing and coming up soon too.
gold souk is a must if not to buy then just to see the display of it . much more then most places in the world.
ski dome if u r interested in seeing the wonder of snow in desert.
some of the big shopping malls.
the various cusines available here
desert safari is a must which u mentioned as 4 wheel excursions
the tallest tower in the world under construction now
palm island under construction
the city scape changing soon with towers coming up at great speed every where

We went in November, stayed at the jumeria beach hotel next to wild wadi. You must see a few things while you are there
1, The Burj al arab, go at night, the light show is fantastic, although you may have to pay to get in if you are not stayiong there.
2, Wild Wadi, out of this world you can easily spend days here, well I could anyway.
3, The snow dome at Emirates mall. This will blow your mind. Its like looking at a swiss village in a snowglobe, very surreal.

Unless you are going to the souks, the prices at the malls are not any cheaper than they are in the UK. When we went you were getting around 7 dirums to the pound

I can recommend a great Persian restaurant there. It is called 'Shandiz'. Sorry I can't remember the address.
Also a trip to the 'Gold City' is interesting.

Make the best of your stay there.
