Yes, the Disney Dollars can be used to buy pretty much anything inside of Disney. It basically works like cash or a gift certificate/card for Disney.

For the most part yes the Disney Dollars work nearly everywhere on Disney property, (a handful of 3rd party participants may not accept them so be sure to ask before hand). But anything Disney owned (theme parks, the Disney cruise ships, Castaway Cay, and the Disney stores), they will work for.
P.S. The vendors on the street may or may not take them so once again ask before hand.
