check to see that the food is kept on ice while in display cases, also check your local health department for inspection scores; they're available to the public.

In most states there is a Health card in the window or near there.
It will tell you how it will it passed its last inspection.
Or call the State health board & ask them if there has be a report made on a oyster bar. All so you can ask the Mang. to see the back
of the house. Most will be glad to show there place.

If you live in a big enough area, you could check community review listings, such as Yelp.com to see what other people thought of the place, they'll more than likely mention food quality if it's a seafood restaurant.

Go in and ask to see their latest food inspection report. Restaurants must let you see it and what their violations were. Specifically look at the temps section, food handling practices, and sanitation.
