What, in the fictitious "Gunsmoke" world, is the difference between a "Marshal" and a "Sheriff," and why was Dodge singled out to have a "Marshal" while the surrounding towns all had "Sheriffs"?

Yes (see above) Marshall's are federal appointee's or elected town Marshall's and Sheriff's are elected for local municipality's.
Matt was a U. S. Marshall and had a wider range of jurisdictition than the town of Dodge or the county of Ford.

Some towns had "Town Marshals. Dodge City had a US Marshal that gave him authority for the whole Ford County. Dodge City had a wider verity of drifters than smaller town a round.

Marshalls are federally appointed while Sheriffs are locally appointed.
