You can read the book "Applied cryptography by Bruce Schneier" and for some demonstration use CrypTool : - "http://www.cryptool.com/", Best demonstration you can give using the software. you need to download the application and become master in 10 mins. All the best.

Try using "Cryptography & network security" by Stallings.Its a very good book.

gee i have looked at some really good books on that subject but at this moment i can not recall their names of the books, sorry.
