Symphony X, Dysrhythmia, and Apocalyptica are not death metal bands. Symphony X isn't even an instrumental band...

I can't think of any purely instrumental bands, but I know of some instrumentals by death metal bands:
Arghoslent - "Incursions"
The Chasm - "From the Curse, a Scourge..."
Cannibal Corpse - "Infinite Misery"
Death - "Cosmic Sea"

Instrumentals are rare within death metal. Most instrumental songs are actually ambient interludes that are about a minute long and aren't really in a death metal style.

yeah... none of those band listed are death metal. I have never heard of an all instrumental death metal band and i dout one exist but there a good number of instrumental thrash bands and that's the closest you will get.

Apocalyptica. Their Metallica covers became really famous but they have a lot of amazing original works. Check out my third source.

Yeah, I can think of one real good one. The band is Dysrythmia, there on relapse records.
