Since she has chosen to let you know she practices she must be comfortable with you. Most witches (including myself) are happy to discuss what is what with open minded people (such as yourself). So I am pretty sure she would be open to talking to you about it.

Symbols mean different things to different people... she may be invoking a Goddess figure, of which both the rose and wheat are symbols. Turning a rose upside down lets it dry and preserve in a nice-looking state.

Just ask her and find out. People make up all kinds of things and call them magic spells, so there 's no way to tell. Silver Ravenwolf, a writer of occult books, even made up a spell involving an empty Pringle's potato chip can.
