I plan on buying a Wii in the next few weeks, but all of the websites I visit seem to only be selling a bundle package of some sort. Can I buy just the $250 system at my local EB, or do I have to buy a bundle pack?

If you want "just" a Wii, you have to go to a brick and mortar shop. The "bundles" are merely an online gimmick to make you buy more stuff.

Okay, here one thing, its not a "bundle" it is the entire thing, if you just want a Wii, it will still cost 250 dollars,
the bundle isn't bad, its 250 bucks and you get the Wii, a game, and a remote with a nunchuck.

i'm sure you can just buy the console unit itself, but the availability is the main question. Try looking for one on ebay.
