Phonics, phonics, phonics. If your school is a "whole language" approach, then throw it out and teach them phonics.

Also you should look into DRA (Developmental Reading Assessment) to chart the kids reading fluency/comprehension

Another superb idea is to drill and kill number facts whether its addition/subtraction (1st-3rd grade) or multiplication/division (3rd-5th grade)

I just had this conversation with my collegues over lunch today about our sixth graders not knowing their basic facts. Some still need their fingers to do 8-6.

We have several students who don't know how to read since they have no knowledge of decoding/phonics. Which in turn does effect their spelling.

PLEASE PLEASE I beg you to focus on these areas.

The professors at my most recent university said to keep up with everything that would belong in a portfolio so the student teacher will have something to show when questions are asked about experience. I'm guessing individual and group projects should be included.

Knowledge of classroom management techniques is critical.

It helps to know Spanish.

If your professors have personal (or even just professional) web pages, visit them to find helpful websites. They may have pages affiliated with the college or university.

And I'd encourage you to keep an eye on free electronic books and free audio books. I'd like to believe that a teacher could find something for a student to read no matter how many books the student has read already, and reading along (to an audio book) may be helpful in some cases.
