No one person invented ink. The first inks were fruit or vegetable juices; protective secretions from cephalopods such as squid, cuttlefish, and octopus; blood from some types of shellfish; and tannin from galls, nuts, or bark from trees. The first man-made ink appeared in Egypt about 4,500 years ago and was made from animal or vegetable charcoal (lampblack) mixed with glue.

do you mean printer ink or just ink, if you mean ink then ink was invented in the olden days from crushed berries and was dipped into a brush to make symbols on surfaces.

Erm, interesting. Obviously, ink came from the squid and plants. But who was the first person to write with it? I'm not much help am I? The Shaggy Inkcap mushroom was also used very early on by European Monks to write bibles.
