In my opinion NO they shouldn't. In most restaurants the dishwasher has to work long after everyone else is done.
Dishwashing is the hardest labor intensive job in the restaurant business. The manager, waitresses and cooks should split it.

Are you asking if a dishwasher (machine) should clean. The answer is no. If you are a person, and want to continue earning a salary, the answer is yes. Just make sure to wash your hands.

That is the normal thing. When things get slower and you don't have anything to do, they want you to keep working to earn your money. So it could be a number of things they would want you to do.
