The word is French, and the French language uses different endings to denote whether the word refers to a male or a female. It also uses an accent to denote how the word is pronounced. So my boyfriend would become my fiancé because he's a man, while your girlfriend would become your fiancée because she's a woman. Sometimes the word is "Americanized" to fiance and fiancee (no accents) because it's easier to type.
