Because us men tend to extrapolate the meaning we want to hear out of about anything they say......especially after the third date.

You're overgeneralizing.
Not all women find it impossible - and plenty of men I know have this problem too. In fact, I find it hard to believe that you have no problem whatsoever saying anything you want whenever you want to. The reason that anyone has a hard time saying things is because the rules of society teach us that some things cannot be said bluntly or that they cannot be said at certain times. Sometimes people take these inhibitions too far, it is true, but societal regulations exist so that people have a built-in mechanism for politeness so that we don't just get into fights all the time. Yeah, that'd be fun.
So if you have a problem with a certain woman, why don't you follow your own advice and ask her what she really means?

Well in my opinion some men are just impossible to talk to. And when you are spilling your feelings out you always wonder how he is going to take it. Then it could be nerves, or worrying about how you may reply. Numerous things, depending on the subject put yourself in that person shoes.

I also think it goes both ways cause some men have a hard time telling what they actually mean. At the end of the day we all sugar coat!

Because many women are too worried they're going to hurt feelings or cause someone to get upset. We're taught from a young age that "good girls" don't rock the boat. So instead of being honest and direct, many (not all) tend to hint around and then read too much into the answer.

I thought that was men that did that... we all do that men and women.

Women beat around the bush sometimes because they are so concern about feelings and what others think. Sometimes they themselves don't really know what they mean and will appear evasive or ditsy. Women are smart and caring. Guys give us a break and be patience. Give us time to reply and the freedom to not be judged on how and what we say.

My guy gives me that freedom to say whats on my heart to have the opportunity to figure it out as to what I want it to mean. How wonderful to have such freedom. He allows me to be me and embraces my women hood. That's being a friend and being in love.

You shouldn't generalize. The answer to your question is that a lot of women are just talking because it is their turn to speak. They don't actually have anything to say. It's difficult to put nothing into words properly. Just like men.

There is a wonderful book written by Deborah Tannen, called "You Just Don't Understand," which explores the differences in the way men and women use language. I'd recommend it very highly.

Usually it's to keep from hurting feelings. Unless they are mad. Then no problem saying what they mean. The problem lies in the understanding capabilities of the listener.
