I'm requoting a previous answer of mine in part from a similar question a few months ago.
It's highly unlikely Anne and Peter had "sexual intercourse" and nothing like that is referred to in the diary. The diary reflects a very innocent, pg-13 exploration where they do some kissing and probably a little "necking."
In response to your question about what and wasn't edited;
Anne herself did quite a bit of "editing" on her diary. Not everyone knows that she actually wrote two versions of the diary - after she heard a radio report in 1944 that inspired her to think she might one day publish her "war diary" as a record of what she went through, she went back to the diary she had been keeping and "revised" and expanded many of the entries.
The original printing of "Anne Frank: Diary of A Young Girl" was edited by her father and reflected what was appropriate for the time of publication (late 1940's.) There was no such thing as mentions of menstruation or other open discussions of her sexuality - it wasn't considered appropriate. So her father edited it out - along with some of the stuff about her conflicts with her mom, probably because it was so raw and painful for him to read, so recently after both of their deaths.
additionally, he put together the "two" editions into one - which seems to be in keeping with the spirit of what Anne wanted. The actual diary was rescued by the helper Miep Gies the day the Franks and Van Pels (the real name of the Van Daans) and Dussel were arrested. Some loose pages were lost in the shuffle (the Nazi officers went through their stuff) so parts are "incomplete" in that there is only the 1944 revisions and not the original entry.
The really excellent "Definitive edition" edited by Mirjam Pressler keeps the idea of a diary you can read straight through, while combining elements from both of Anne's "versions" and restoring most of what Anne's Father Otto kept out of the original printing. Additionally, there is a very fine scholarly edition which is this giant book that puts both of Anne's versions side by side, along with notes. (I wouldn't recommend it unless you are an Anne Frank nut like me, though.) Except for a few sentences, this has every word that Anne wrote.

In 1947 (when her dad first had the diary published) , even discussing your period was not accepted in children's literature. (the first mention of a girl getting her period wasn't until the sequel to harriet the spy, "The Long Secret" was published in the mid-1960s, and it was very controversial - libraries were banning the book and stuff like that.) But you'll find that hidden "controversial" anne frank entry in the definitive edition.
The entry reads like someone going through a very common stage of puberty who is curious about her developing body and trying to explore it. the very next entry starts a long, intense fantasy/dream about this guy named Peter Schif (different Peter) that she had a crush on since kindergarten, and then pretty soon after that she goes into the making out with Peter "Van Daan" stuff and writes entry after entry about how she can't stop thinking about him and how he makes her feel."

Some frustrations with her mother were left out out of respect for the dead.
I think there was also a part where Anne was descibing female sexual organs (just a very scientific description like you would read in a high-school biology book)
If you get one of the more recent editions of her diary, even the edited parts are included. Some even include people's real names (she gave everyone an alias because she knew they'd be published).
But she never did sleep with Peter (at least she didn't mention it in her diary). They kissed though.

Yeah in new editions the only parts that were taken out were parts involving Anne's negative feelings towards her parents (I think the person who said it was about her mother was right), and similar things that her father didn't want to release for personal reasons. I believe everything about Peter is in there. They definitely didn't have sexual intercourse.

They didn't actually have sex, but her sexual feelings as she went through puberty were originally edited out of the diary. So were, as the previous poster noted, negative comments about her mother. I also think there were some references to menstruation that were deleted.
The diary is now available in both its original form and an annotated one, I think, which might interest you. I'm sure it will answer this and other questions in detail.

I know someone who read Anne Frank's Diary... he claims that she and her boyfriend did something sexual... :/ However, I don't know if this is true. I know that her boyfriend was one of the people she stayed with... not sure if she ever masturbated

More recent research suggests that the diary was not just heavily edited, but largely written by her father. It should be treated as a work of fiction.
