I've been there a few times around this time frame, and it is far from the worst time to visit. Your crowds are a little heavier than the off season, but the off season can also be bad because that is when a lot of refurbishments happen so rides may be closed.
You will be missing the spring break time frame when it will be really crowded. But, you are getting closer to summer so it will be getting warmer and crowds will start to pick up somewhat for summer. Since it is getting close to the end of school, finals, etc. not as many people skip.
Your crowds will not be the worst they can be, but they also won't be real low, you will fall right in between.
Really, crowds will be about the same, no matter what time you go to the parks. Actually, going in the afternoon may make things a little worse. If you are staying onsite, take advantage of the extra magic hours. There will be much less people in the parks and you will be able to get on a lot more in a short period of time, over the rest of the day. I find that I am far enough ahead of people when I doing extra magic hours that I will mid-afternoon before I really start experiencing crowds.
If you don't have the option of extra magic hour, or you just prefer to go later, then the best thing to do is try to go the opposite way of the rest of the crowd.
It can be hard to avoid crowds, especially during the busier times, but if you use Fastpass, that will cut down the waits a lot. Also, the extra magic hours, though usually pretty short, really give a good jump on the day.
Goign in the afternoon probably won't help much though. The crowds won't be low enough that it makes that much difference and you will lose half of your day for riding rides.
I actually prefer to go in the morning, ride as much as I want, then leave when crowds pick up or I am tired. I may go to Downtown Disney, a water park, etc.

May isn't a terrible time to go. School isn't out yet and most of the spring breakers are there in March and April. You will still have crowds, but not as bad as in the summer when school is out. Here are some tips:
1. If you are staying in one of the MK resorts, you will see that every day a certain park opens early for resort guests. This may seem to signal which park to go to, but it actually shows which one you should avoid! That park tends to be busier in the morning hours.
2. In general, parks are less crowded in the morning and will grow more crowded as the day goes on. So get to the park early and immediately go to the rides you most want to do as the lines are probably the shortest they will be all day.
3. Be sure to take advantage of the Fast Pass system. Basically, you stick your ticket into a machine and it gives you an "appointment" for the ride (it is in a 15 or 20 minute window of time). It might not be for a couple of hours, but you can go do other stuff and come back for your appt rather than standing in line forever. Another secret for this... you can't have two tickets out at once, so as soon as you have entered the time window for one ride, get a Fast Pass for another ride and then go ride the first one. That way while you are riding the first ride, time is ticking by for riding a second ride.
4. If you are staying in a MK resort and have a car with you, take the car to the parks instead of riding the bus. The bus takes a bit of time and can be very crowded in the morning and evening. You get free parking as a resort guest and it is more convenient. Keep in mind, however, that you can't drive directly to the Magic Kingdom. You drive to a transportation center and have to either take the monorail or the boat to the park itself. If you were planning on having dinner at Epcot (where most of the best restaurants are), park at Epcot and take the monorail to the MK park and then take the monorail back to Epcot. It ends up being faster.

Always get there as early as possible. This is a good time of year as the kids here in florida are in school. Starting in the morning is really wonderful because you will be able to get on at least a couple of rides with almost no wait. As the day drags on though, the lines will get long and you may have up to one and a half hours wait time. Hope you have a great time!

The crowds aren't as bad in early may as in June, we always go late May after school lets out. It is crowded, but take advantage of the fast passes and the extra magic hours, and you will be fine. Definitely start early!!! (If I were you I'd also book in at least one more park, maybe Animal Kingdom, and stay on-site, which gives you the extra hour option as well as EASY access to the parks) Whatever you do, you'll have great fun!

it's always crowded! i grew up there, and was at the MK for various parts of the year... there is no one part of the year that isn't crowded. crowds and lines are long... start FIRST THING in the morning! don't nap midday, just wait it out. go on the BIGGEST rides first thing in the AM (magic mtn, space mtn, and splash, mtn). but the crowds will always be there, so just wait it out... buy a fast pass if you can!

Thats the worst time to go. May is spring break time eveyrone goes to disneyworld. The rides are super long even the fast pass lines are long. The best time to go is during christmas time becuase a lot of people stay home.
