I did a really fun one in 8th grade. I had people of all ages play 15 minutes of the same video game. I took their blood pressure before, during, and after play. My hypothesis was that playing would cause someone's blood pressure to go up. It did! 'Course, this was back in the early 90s, on the old NES.
The judges loved it. Their only complaint was that I didn't test more people.

You need to ask yourself some questions:
1. What, in my science studies, has been the most interesting
to me?
2. Am I good experimental researcher?
3. Or would I do better doing a project that required something
more in the way of statistical analysis? Maybe something
to do with weather, like effects of el Nino over so many
years, or winter weather patterns where you live.
4. How much time do you have to give to the project?
5. And what resources are available to you.
6. It would be possible to do a demonstration which re-created
an historical experiment--something you could follow and
see if you got the same results and why or why not.
A lot depends on how scientific you are? I found I was better
at statistical analysis and drawing conclusions from it.
You may be really creative once you get going and love to get your hands into the projects.
You can't decide what until you know what you would be best at, and what would be most pleasurable for you in doing it.

Water Bottle Rockets OR Diet Coke and Mentos. These are both fun and you get to watch things explode. There's a lot of research out there on both of them too. Depending on your age, you might need help with the water bottle rockets, but you should be able to handle the Mentos and Diet Coke.
If you don't know what I'm talking about, put a 2 liter bottle of Diet Coke, and a pack of mentos. GO OUTSIDE and wear some glasses or something to protect your eyes. Drop the mentos in the Diet Coke bottle and stand back!
As for the water bottle rockets. If you take a 2 liter bottle and put some water in it, and then pump air into the bottle, you can make the bottle SHOOT upwards. This is kind of dangerous if you don't have much room, but a baseball field would be more than enough room, as long as you don't put too much air in the bottle. The designs for this are online, and its a lot more fun than bean plants.

Have 3 people play the card game "Memory" (where you have 20 cards with pictures on them and turn them upside down, turning them over 2 at a time until you can turn two over and match them all) after getting 8 continuous hours of sleep. Then, the next night, have one person get 8 hours of sleep, on person get 4 hours of sleep, and the last get no sleep, the play the game again. Record your observations.

Get 4 jars and fill one with soil from your back yard, one with potting soil, one with sand, and pay a wet paper towel in the last. Put a bean seed in each one (placing the seed under the wet paper towel in the jar) and water them equally each day (spray the paper towel twice daily to keep it moist). See which method of planting produces the best bean plant.
