what percentage of Americans are involved in the theater. Includes the lighting techs, grips, movies etc etc.

This question is impossible to answer. You could get a count of all the union folks working in theatre, but that would give you only a small percentage of the number of folks "involved in the theatre." It doesn't include people working in college theatre, community theatre, regional, stock, dinner theatre, etc.
