First and foremost take the ball early. By doing this you don't allow the ball to fully kick up and spin. You can play either offense or a good defensive shot when you get heavy topspin. James Blake constantly beats Nadal who plays with heavy topspin because he takes the ball early and hits it flat. Usually heavy topspin hitters hate hitting balls that come at them flat, hard, and low. Or you could try what i like to do which is play defensive and give them a high deep looper to usually their backhand side, it takes away their rhythm and what is most likely their stronger weapon.

As with any spin, you need to adjust the angle of your racquet. Spin will make the ball arc toward the direction of the spin -- in the case of topspin, downward toward the court surface. Once you start to get a sense of the speed of the topspin, you can angle your racquet up slightly to counteract the downward motion of the topspin. Also, if you hit the ball harder when you return a ball with topspin, it will flatten the downward arc, so the ball is returned straighter.

Hit the ball on the rise, not from 10 feet behind the baseline. The topspin will help with hitting on the rise, and you can use that to your advantage.
