According to Wikipedia, which I linked in the sources below, it is because nuts are actually fairly sweet in comparison to other natural things, after honey and berries. Sweeter than a lettuce leaf, for example. It says the term has been around longer than modern sweeteners.

I've also read that it might be "ironic" rather than literal. I think we'd have to find Mr. or Mrs. Nut to figure out where this term originated. It might be on Unsolved Mysteries some day.

In nature nuts are sweet - in comparison with many other foods. Prior to the introduction of refined sugar the only really sweet thing was honey. Next down the line were fruits, berries and some nuts, eg chestnut - hence the expression.

I'd never actually heard the expression before. But it could be that 'sweet' is being used here in its alternative sense of 'nice', or 'endearing', just as one refers to 'a sweet little girl' etc.

I'm pretty sure it's ironic an expression... If something is as sweet as a nut it's not that all sweet, nice or good after all.

A bit after like explaining to something someone, say if they it's 'as clear as your mud', explanation probably wasn't that great.
