I think this depends entirely on the theme of the cafe. I think that may be where you need to start. No two cafe's are the same. If that were the case, every cafe would look like akin to a Waffle House.
Update your question with the theme you are desiring. It will be MUCH easier to provide suggestions once the theme is established and made known.
