I agree with Princess Bride, but the others like Spaceballs will get some parents annoyed.
Ferris Beulers was made before there was PG 13, and would not have been PG if rated today.
Laurel and Hardy Way Out West,
Beverly Hills Ninja should be PG, but the rating system got stricter after 1989. Drug related humor? Not any more than Dumbo.
Ghostbusters is great (but again, it's before the PG 13 existed)
And gremlins, if you don't mind violence (but isn't that what slapstick is about?)

For good PG movies that aren't too childish, you have to go back to the 80's, before PG-13 was created. Try some of these:
The Princess Bride - it's both witty and slapstick
Better Off Dead - classic John Cusack silly yet clever humor
Ferris Bueller's Day Off - by the King of 80's teen movies, John Hughes
Sixteen Candles - another John Hughes
Spaceballs - for those who are tired of the endless Star Wars prequels
More recently, try Napoleon Dynamite or Nacho Libre.

Princess Bride (As someone has already suggested.)
Hoodwinked (I don't care how old people are. A movie with a singing goat is funny.)
