The clutch in my 200tdi disco is very high. I've looked at the Haynes Manual but they don't say how I can adjust it so that it's lower.

Any Ideas?

The clutch get higher and lower with use. You will need to replace it soon as a high clutch is a sign it's about to go.

I'd get a specialist to do it too, Discoveries are a bit different in their build as far as I understand, book it in to Landrover.

its hydraulic and not really adjustable.. basically its about knackered / worn out and needs a replacement clutch.
